Caparis spinosa or capers it is a wild variety growing spontaneously in rocky soils of the valley. During June the crop is collected washed with clear water and then pickled in apple vinegar water and salt.
Pulp and chunks of organically grown plum tomatoes are boiled in stainless steel vats and combined with carefully selected ingredients: onions, garlic, apple vinegar, salt, oregano, capers and spices. The end product gives you a healthy note of the valley’s scent. Treat your taste buds to an invigorating burst of tomato flavor from the heart of our valley!
Our jams are considered as Spreads since the added quantity of Organic golden cane sugar is drastically reduced thus preserving a strong fruit taste. All our spreads are made from organic fruits selected carefully from different Lebanese rural villages at maturity stage. They are carefully cooked in minutes, hot filled in glass jars and pasteurized without preservatives.
