Caparis spinosa or capers it is a wild variety growing spontaneously in rocky soils of the valley. During June the crop is collected washed with clear water and then pickled in apple vinegar water and salt.
Serving recommendations: Beside their medicinal vertus they do well with all kinds of fish and meats, and is an essential base for tartar sauce
